Er kwam eens een carnivoor langs

Ik loop wat rond in de groothandel, samen met nog 5000 mensen, en zie allerlei stukken beest liggen. Voor iemand die geen vlees eet, doet dit mij niks goed. Toch moet ik wat kiezen, er komt een carnivoor eten. De slager kijkt goedkeurend naar zijn assortiment in de koelingen. Ik vraag hem wat de keus in hammen is. Hij loopt met mij mee en laat mij zijn voorverpakte, gemarineerde hammetjes zien, 'lekker met wiskey marinade'. Ik vertel hem dat ik die niet wil, maar een grote beenham, ongekook graag. Ik heb net belachelijk veel kookshows gezien op bij de Britten en dit is wat er wel leuk uitziet voor de hobbykok om thuis te bereiden. Een ridicuul groot ding in een pan met uien en kruiden. De slager's ogen beginnen te twinkelen en de man loopt naar een kamergrote koelcel. Daar komt hij aan met een enorm pakket. Hij vertelt trots dat hij er al 8 van de 10 heeft verkocht, allemaal aan Engelsen. Juist, die moet ik hebben! Een traditionele Kerstham.
Onze grootste pan is niet groot genoeg dus ritselt Kees bij de chef in de straat een grote wildpan. 4,5 uur moet het varkentje koken in appel- en cranberrysap, wat van de nodige specerijen en gekookt is 'ie. Dan een glacee erop, nog wat grillen en het ding kan zo op tafel.

Gemberkoek huisje

Kies je favoriete gemberkoekjes-deeg recept.
Maak hiervan een huisjes ontwerp.
Vergeet niet, zoals ik, de zijkanten van het huis in een punt te maken zodat het dak hierop kan rusten. Ik heb moeten bijbakken. Ik heb het huisje versierd met rozijntjes en kokos, vastgelijmd met poedersuiker en een druppie water. Geef het huisje genoeg tijd om tussentijds te drogen. Mijn raampjes hebben eerst een nachtje gedroogd voor ik ze rechtop heb gezet.

Cut-Out Cookies



Tot nu toe het beste deeg om vorm koekjes mee te maken, de koekjes zijn nog lekker ook.

Vergeet niet een gaatje te maken, rood kerstlint erdoor en in de boom met die dingen!

Nigella's Cut-Out Cookies

Ingredients:

6 tablespoons soft unsalted butter
1/2 cup sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Icing:
2 to 3 tablespoons just-boiled water
1 cup confectioners' sugar, sifted
Food coloring, preferably pastes
Special equipment: cookie cutters
Directions
Preheat the oven to 180 degrees .

Cream the butter and sugar together until pale and moving towards moussiness, then beat in the egg and vanilla. In another bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the butter and eggs, and mix gently but surely. If you think the finished mixture is too sticky to be rolled out, add more flour, but do so sparingly as too much will make the dough tough. Form into a fat disk, wrap in plastic wrap, and let rest in the refrigerator for at least 1 hour.

Sprinkle a suitable surface with flour, place disk of dough on it, and sprinkle a little more flour on top of that. Then roll it out to a thickness of about 1/4-inch. Cut into shapes, dipping the cutter into flour as you go, and place the cookies a little apart on 2 parchment or silpat lined baking sheets.

Bake for 8 to 12 minutes; obviously it depends on the shape you're using and whether they are on the upper or lower shelf, though you can swap them around after about 5 minutes. When they're ready expect them to be tinged a pronounced gold around the edges; they'll be softish still in the middle, but set while they cool.

Remove the cookies with a flat, preferably flexible, spatula to a wire rack. When they are fully cooled, you can get on with the icing. Put a couple of tablespoons of not-quite-boiling water into a large bowl, add the sieved confectioners sugar and mix together, adding more water as you need to form a thick paste. Color,as desired. I think pastes are much better than liquid, not just because the range of colors is better but because they don't dilute the icing as they tint. Ice cooled cookies, as desired.

Een recept van Nigella Lawson

Cupcakes Ingredients:

1/2 cup plus 1 tablespoon soft butter
1/2 cup plus 1 tablespoon sugar
2 eggs
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons vanilla extract
2 to 3 tablespoons milk
Directions
Royal Icing, recipe follows

Special equipment: 12 bun muffin pan, lined with muffin papers.

Take everything you need out of the fridge in time to get to room temperature - and this makes a huge difference to the lightness of the cupcakes later - and preheat the oven to 400 degrees F.

Put all of the ingredients for the cupcakes except for the milk into a food processor and blitz until smooth. Pulse while adding the milk down the funnel, to make a smooth dropping consistency.

Divide the mixture between a 12-bun muffin tin lined with muffin papers, and bake in the oven for 15 to 20 minutes. They should have risen and be golden on top. Let them cool a little in their tins on a rack, and then take them carefully out of the tin to cool in their papers, still on the wire rack.

Ice with Royal Icing.

Royal Icing:
*2 large egg whites (or substitute powdered egg whites)
3 cups confectioners' sugar
1 teaspoon lemon juice
Combine the egg whites and confectioners' sugar in a medium-size mixing bowl and whip with an electric mixer on medium speed until opaque and shiny, about 5 minutes. Whisk in the lemon juice, this will thin out the icing. Beat for another couple of minutes until you reach the right spreading consistency for the cupcakes.

Yield: sufficient to generously ice 12 cupcakes

Het werk in de fabriek ligt even stil. Ik hoor gejammer vanaf de bank. Al twee dagen moet in de avond het licht uit, het geluid weg en de kaarsen verplaatst. De dokter kijkt met zijn lamp. Een dubbele ooronsteking. Wij wachten stilletjes op herstel!

Ik ga eens surfen op het net, plaatjes kijken helpt tegen alle soorten van tegenslag....
